
Salmon With Minted Pea Smash

Ingredients
- 2 fillets Salmon
- 1½ cups Peas
- 1 cup Snow Peas, trimmed and sliced
- 3 tbsp Mint, chopped
- 1 Lemon, half juiced, half in wedges
- 1 clove Garlic, grated
- 2 tbsp Olive Oil
- ¾ tsp Salt
- ½ tsp Pepper
Steps
- Cook: Pat the salmon dry and season with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium-high and cook skin-side down until crisp, about 4 minutes, then flip and cook 2 minutes more.
- Cook: Meanwhile, blanch the peas and snow peas in boiling water until bright and tender, about 3 minutes, then drain.
- Prep: Roughly mash the peas and snow peas with the grated garlic, lemon juice, remaining 1 tbsp olive oil, mint, and a pinch of salt.
- Finish: Spoon the pea smash onto plates, set the salmon on top, and serve with lemon wedges.
