Ingredients
- ½ block tofu, patted dry, cut into 1-inch cubes
- 2 cups Watermelon, cut into 1-inch cubes
- ½ whole Cucumber, halved lengthwise, thinly sliced on a bias
- ½ cup Snap Peas, strings removed, halved on a bias
- ¼ small Red Onion, very thinly sliced
- ¼ cup Mint, leaves picked, larger ones torn
- 2 tbsp cilantro, roughly chopped
- 1 whole Lime, halved
- 1½ tbsp gochujang
- 1½ tbsp sesame oil
- 1 tbsp soy sauce
- 1 tsp honey
- 1 tsp Ginger, finely grated
- 1 tsp Sesame Seed

Steps
- Quick-Pickle the Onion: Place the thinly sliced red onion in a small bowl. Squeeze half the lime over it, add a pinch of salt, and toss well. Set aside for at least 5 minutes — it will turn bright pink and mellow out beautifully.
- Make the Dressing: In a large bowl, whisk together the gochujang, sesame oil, soy sauce, honey, grated ginger, and the juice of the remaining lime half. Taste — it should be spicy, savory, slightly sweet, and punchy. Adjust with a little more lime or honey if needed.
- Add the tofu cubes to the dressing bowl and gently fold to coat each piece. Let them sit for 2–3 minutes while you prep the rest — the tofu will absorb the flavors quickly.
