Ingredients
- 2 ears Corn, kernels cut off
- 2 Zucchini, grated and squeezed dry
- 2 Egg, beaten
- ¾ cup Flour
- 3 Green Onion, sliced
- ½ cup Yogurt
- 1 Lemon, juiced
- 2 tbsp Parsley, chopped
- 3 tbsp Vegetable Oil
- 1 tsp Salt
- ½ tsp Pepper
Steps
- Prep: Stir together the yogurt, lemon juice, parsley, and a pinch of the salt to make the dip; set aside.
- Prep: In a bowl, mix the corn kernels, grated zucchini, green onion, eggs, flour, remaining salt, and pepper into a thick batter.
- Cook: Heat the vegetable oil in a skillet over medium heat. Drop in scoops of batter, flatten, and fry until golden and set, about 3 minutes per side. Work in batches.
- Finish: Drain the fritters briefly and serve with the herbed yogurt dip.
