
Cherry Tomato And Basil Orzo Salad

Ingredients
- 12 oz Pasta, orzo
- 2 cups Tomato, cherry tomatoes, halved
- ½ cup Basil, torn
- 2 cloves Garlic, minced
- 1 Lemon, zested and juiced
- ~¾ cup Cheese, feta, crumbled
- 3 tbsp Olive Oil
- 1 tsp Salt
- ½ tsp Pepper
Steps
- Cook: Cook the orzo pasta in salted water until al dente, then drain and rinse briefly under cool water.
- Cook: Warm 1 tbsp olive oil in a skillet over medium heat, add the tomatoes and garlic, and cook until the tomatoes start to burst, about 4 minutes.
- Finish: Toss the orzo with the burst tomatoes, lemon zest and juice, remaining 2 tbsp olive oil, salt, and pepper.
- Finish: Fold in the basil and crumbled feta cheese just before serving.
