by Kyran AdamsCrisp-tender green beans and golden tofu come together in a glossy ginger-sesame sauce for a fast vegetarian dinner.
Ingredients
- 14 oz Tofu, pressed and cubed
- 1 lb Green Beans, trimmed
- 3 cloves Garlic, minced
- 1 tbsp Ginger, grated
- 3 tbsp Soy Sauce
- 1 tbsp Honey
- 1 tbsp Sesame Oil
- 1½ cups Rice
- 2 tbsp Vegetable Oil
- ½ tsp Chili Flakes
Steps
- Prep: Cook the rice according to package directions. Stir the soy sauce, honey, and sesame oil together for the sauce.
- Cook: Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high. Fry the tofu until golden and crisp on all sides, about 8 minutes, then remove.
- Cook: Add the remaining 1 tbsp oil and the green beans. Stir-fry until bright green and blistered but still crisp, about 5 minutes.
- Cook: Add the garlic, ginger, and chili flakes and cook until fragrant, about 1 minute. Return the tofu, pour in the sauce, and toss until everything is glossy and coated, about 2 minutes.
- Finish: Serve the stir-fry over the cooked rice.
