by Peter PA fast, bright weeknight pasta — plump shrimp seared in garlic butter, finished with lemon and a pinch of chili. On the table in 25 minutes.
Ingredients
- 12 oz Spaghetti
- 1 lb Shrimp, peeled and deveined
- 4 cloves Garlic, minced
- ¼ cup Butter
- 2 tbsp Olive Oil
- 1 Lemon, juiced
- ¼ cup Parsley, chopped
- ½ tsp Red Pepper Flakes
- 1 tsp Salt
- ½ tsp Pepper
Steps
- Prep: Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Reserve a cup of pasta water, then drain.
- Cook: Melt the butter with the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until fragrant, about 1 minute.
- Cook: Add the shrimp in a single layer and cook until pink and just opaque, about 2 minutes per side.
- Finish: Add the drained pasta and lemon juice, tossing to coat. Loosen with a splash of pasta water if needed.
- Finish: Season with salt and pepper, scatter the parsley over the top, and serve right away.
