by Kyran AdamsSweet snap peas and quick-seared shrimp in a bright garlic-ginger sauce that comes together faster than takeout.
Ingredients
- 1 lb Shrimp, peeled and deveined
- 3 cups Snap Peas, trimmed
- 3 cloves Garlic, minced
- 1 tbsp Ginger, grated
- 3 Green Onion, sliced
- 3 tbsp Soy Sauce
- 1 tbsp Honey
- 1 tbsp Sesame Oil
- 1½ cups Rice
- 2 tbsp Vegetable Oil
Steps
- Prep: Cook the rice according to package directions. Stir the soy sauce, honey, and sesame oil together for the sauce.
- Cook: Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Sear the shrimp until just pink and opaque, about 3 minutes, then remove.
- Cook: Add the remaining 1 tbsp oil and the snap peas. Stir-fry until bright green and crisp-tender, about 3 minutes.
- Cook: Add the garlic and ginger and cook until fragrant, about 1 minute. Return the shrimp, pour in the sauce, and toss until coated, about 1 minute.
- Finish: Scatter the green onion over the top and serve over the cooked rice.
