
Swiss Chard And White Bean Skillet

Ingredients
- 1 bunch Swiss Chard, stems diced, leaves chopped
- 3 cups Beans, white beans, drained and rinsed
- 1 Onion, diced
- 4 cloves Garlic, sliced
- 1½ cups Vegetable Broth
- 1 Lemon, juiced
- ½ tsp Chili Flakes
- 3 tbsp Olive Oil
- 1 tsp Salt
- ½ tsp Pepper
- 4 slices Bread
Steps
- Cook: Heat the olive oil in a large skillet over medium heat. Add the onion and diced chard stems and cook until softened, about 6 minutes.
- Cook: Add the garlic and chili flakes and cook until fragrant, about 1 minute.
- Cook: Stir in the beans and vegetable broth, bring to a simmer, and gently mash a few beans against the side to thicken, about 6 minutes.
- Cook: Add the chard leaves in handfuls and cook until wilted and tender, about 4 minutes. Season with salt, pepper, and the lemon juice.
- Finish: Serve in bowls with toasted bread for dipping if you like.
